Breakfast Muffins

Healthier version of Better Home And Garden Anyone Can Cooking Cinnamon Breakfast Muffin Recipe

1 1/2 cup all-purpose flour
1/2    cup sugar
1 1/2 teaspoons baking powder
1/4    teaspoon ground nutmeg
1/8    teaspoon ground cinnamon
1/8    teaspoon ground cloves
1/4    cup unsweetened coconut flakes
2       Tablespoons ground golden flax seed
1/8    teaspoon salt
1       egg ( I like to leave my egg sit on the counter for 30 minutes to an 1 hr.)
3/4    cup milk
1/3    cup melted butter or margarine
1       teaspoon pure vanilla
1/4    cup unsweetened apple sauce.

1. Preheat oven to 350. Grease twelve 2 1/2 inch muffin cups, set aside.

2. In a medium bowl stir together flour, sugar, backing powder, nutmeg, cinnamon, cloves, salt, coconut flakes, and flax seed. Make well in the center of the flour mixture. In a small bowl beat egg with a fork; stir in milk, vanilla, butter, and apple sauce. Add egg mixture to flour mixture all at once. Stir just until moistened (batter will be lumpy)

3. Spoon batter into prepared muffin cups. Bake in the preheated oven for 20 to 25 minutes or until a wooden toothpick inserted in centers comes out clean. Makes 12 muffins.

*feel free to experiment with adding chocolate or peanut butter chips, berries, bananas, or nuts.
